Viennese Cuisine – the 19th century

The KochKulturMuseum invites you on a fascinating journey through the history of cooking! Discover the rich and diverse influences that shaped Viennese cuisine, brought to the city from the crown lands of the Danube Monarchy. Cook like in the Habsburg Empire – and experience the flavors of history!

Step back in time to Austria’s culinary past, when Vienna was a thriving metropolis attracting people from across the empire. They brought with them the dishes, spices, and traditions of their homelands—regions that are now part of former Yugoslavia, Slovakia, Czechia, Poland, Hungary, and Ukraine. These influences blended with local customs to create what is now world-famous as Viennese cuisine.

Together, we will prepare a three-course menu just as it would have been served in a 19th-century Viennese restaurant. The recipes are carefully selected based on seasonal ingredients.

Menu 1 – The classics

  • Grießnockerlsuppe (beef broth with dumplings made of semolina)
  • Wiener Schnitzel (veal escalopes in a bread crumb coating)
  • Wiener Erdäpfelsalat (typical Viennese potato salad)
  • Kaiserschmarren mit Zwetschkenröster (shredded pancake with raisins and roast plums)

 

Menu 2 – The rediscovered

  • Rindsuppe mit Parmesanschöberl (beef broth with savoury profiteroles made with parmesan cheese)
  • Kaiserschnitzel mit Fleckerl (veal escalopes with capers, lemon zest an rum) with pasta
  • pikanter Spinatpudding (savoury pudding with spinach, eggs and bread rolls)
  • Napoleontorte (sweet tarte made with chocolate and almonds)

  • Drinks (frizzante, beer, wine, water, non alcoholic drinks)

  • Handout with the recipes including sources

We are happy to accommodate dietary preferences and needs! Whether you’re vegan, vegetarian, or have food intolerances, we can offer alternative dishes—just let us know in advance. Our interactive hands-on cooking course is conducted in English, but we are also happy to offer it in German.

The evening begins at 18:00 and lasts approximately 3.5 hours. We’ll spend the first 2.5 hours cooking together, followed by a relaxed and enjoyable meal with good food, drinks, and great company. The cooking course requires a minimum of 6 participants and can accommodate up to 14 guests.

We are located in Vienna’s 3rd district, just a few steps from the famous Hundertwasserhaus. You can reach us easily by public transport:
